Pork Laab with Salad

  • Minced pork (250g)
  • Large bunch of mint
  • Small bunch of Coriander
  • 1 x Shallot
  • Small Carrot
  • 8-10 Cherry Tomatoes
  • White rice
  • One lime
  • Fish Sauce
  • Coconut palm sugar (20g)
  • White sugar
  • Salt
  • Birds Eye Chilli
  • YoYo Salted Green Pepper
  • YoYo Original Ginger Chilli Sauce
  1. Firstly put oil in a pan and add the minced pork. Once cooked, put the pork in a bowl and put to one side.
  2. Put the rice into a separate pan (no oil needed) and turn up the heat for around 3-4 minutes until the rice goes brown and you start to get a toasted smell. Turn off the heat and let the rice go cold.
  3. Chop the coriander, shallot, carrot, cherry tomatoes, mint and chilli. Put them to one side.
  4. Add the rice to a pestle and mortar and grind to a powder.
  5. Take the pork bowl, add in the coriander, shallot, carrot, cherry tomatoes, mint and chilli. Now add in the roasted rice and mix thoroughly.
  6. Add the palm sugar and fish sauce (two tablespoons) to a pestle and mortar. Add in two tablespoons of hot water. Mix together and squeeze in a lime. Add one tablespoon of white sugar and half a teaspoon of salt. Mix thoroughly.
  7. Add both mixes together and then serve onto a plate. Add a handful of YoYo Salted Green Pepper and for a ginger chilli burst a dash of YoYo Laos Sauce original sauce.
Tips
This laab dish you would normally serve with sticky rice. Using the rice to dip into the salad.
