Pork Laab with Salad
- Minced pork (250g)
- Large bunch of mint
- Small bunch of Coriander
- 1 x Shallot
- Small Carrot
- 8-10 Cherry Tomatoes
- White rice
- One lime
- Fish Sauce
- Coconut palm sugar (20g)
- White sugar
- Salt
- Birds Eye Chilli
- YoYo Salted Green Pepper
- YoYo Original Ginger Chilli Sauce
- Firstly put oil in a pan and add the minced pork. Once cooked, put the pork in a bowl and put to one side.
- Put the rice into a separate pan (no oil needed) and turn up the heat for around 3-4 minutes until the rice goes brown and you start to get a toasted smell. Turn off the heat and let the rice go cold.
- Chop the coriander, shallot, carrot, cherry tomatoes, mint and chilli. Put them to one side.
- Add the rice to a pestle and mortar and grind to a powder.
- Take the pork bowl, add in the coriander, shallot, carrot, cherry tomatoes, mint and chilli. Now add in the roasted rice and mix thoroughly.
- Add the palm sugar and fish sauce (two tablespoons) to a pestle and mortar. Add in two tablespoons of hot water. Mix together and squeeze in a lime. Add one tablespoon of white sugar and half a teaspoon of salt. Mix thoroughly.
- Add both mixes together and then serve onto a plate. Add a handful of YoYo Salted Green Pepper and for a ginger chilli burst a dash of YoYo Laos Sauce original sauce.
