YoYo Fries
- Fries 300g (can use frozen or fresh)
- Shallots (10)
- Small bunch of coriander
- Birds eye Chilli
- Salt
- Yoyo Mak Khen
- Vegetable oil
- Slice the shallots thinly and chop the coriander.
- Put the vegetable oil in a pan, add the all the shallots to fry till they go golden-brown then take them out, dry on the kitchen roll to soak up the excess oil.
- Add more oil into the pan and get the temperature high. Add in the chips - note if you are using frozen chips, leave them prior to adding to remove excess water. Cook the chip for around 10 mins. Stir them occasionally until they are yellow-brown and are crispy. Taste them - if they are crispy enough then they are ready. Transfer to a basket to remove excess oil. Grind YoYo Mak Khen onto the chips when they are still hot.
- Add the cooked chips to a large bowl. Add a pinch of salt. Add chopped chilli and coriander.
- Add the fried shallots to finish off to serve. Dip the chips in Yoyo Luang Prabang Sauce - the perfect condiment for YoYo Lao Fries!
