Stir fry aubergine with chicken

  • Large aubergine (2)
  • Small bunch of spring onion
  • Garlic cloves (3)
  • Fresh red birds eye chilli (2)
  • Yoyo Salted Green Pepper 2 x teaspoons
  • Minced chicken 200g
  • Oyster sauce 2 x tablespoons
  • Sugar 1 x tablespoon
  • Salt ½ teaspoon
  • Yoyo Original Laos Sauce 3 x tablespoons
  1. Start by washing the vegetables and take the aubergines first and slice them.
  2. Chop the spring onions, garlic and then the chicken.
  3. Put some oil in a pan and turn on the heat. Add the garlic and stir until the garlic turns yellow-brown.
  4. Add the chicken until cooked followed by the aubergines, oyster sauce, salt, sugar and some Original YoYo Laos Sauce.
  5. When everything is cooked through, take off the heat and add to a bowl. Add in the spring onions and chopped chilli.
  6. Serve with boiled or sticky rice.
Tips
You can swap out chicken for another type of meat as you wish.
